Chole Bhature Recipe: Ingredients
- White Chickpea (Kabuli chana) – 250 gm (soaked overnight)
- Onion – 1 medium size
- Tomatoes – 2 medium size
- Green Chilli – 2
- Ginger – 1 inch long piece
- Cumin Powder – ½ teaspoon
- Dry Mango Powder (amchur) – ½ teaspoon
- Pomegranate Powder(anardana powder) – 1 teaspoon
- Coriander Powder – 1 teaspoon
- Red Chilli Powder – 1 teaspoon
- Turmeric Powder – ¼ teaspoon
- Asafoetida (hing) – ½ teaspoon
- Garam Masala – 1 teaspoon
- Chole Masala – 2 teaspoon
- Refined Oil – 4 tablespoons spoon
- Salt – 2 teaspoon or as per taste
- Green Coriander – 2 teaspoon (finely chopped)
- Maida Flour – 500 gm
- Semolina (suji) – 50 gm
- Curd – 100 gm
- Salt – 3/4 tablespoons
- Baking soda – 3/4 teaspoons
- Oil – for deep fry
- Ginger – 1 teaspoon (optional)
- Mango & Green Chilli Pickle
- Onion Slice
- Green Chutney (optional)
Method – How to Make Chole
Step 1 – Take pressure cooker and put chickpea, salt and 4 cup water, now cook it for up to 6 to 9 whistle on a medium flame. When chickpea done drain out extra water and keep aside.
Step 2 – Take a grinder, in grinder put tomatoes, green chilli and grinds it to make smooth paste.
Step 3 – Heat the oil in a pan, now add onion and saute until the onion gets golden brown, now add tomato paste and saute it for 1 min.
Step 4 – Add the chole masala, red chilli powder, mango powder, turmeric powder, coriander powder, pomegranate powder, asafoetida, garam masala, cumin powder and salt, cook on low flame for 5 min till oil start leaving on the edges.
Step 5 – When masala done now add the boiled chickpeas and 2 cup of water and mix well. Put cover on pan and cook it at low flame for 10 to 15 minutes. After 15 minutes turn off the gas and add chopped green coriander now chole is ready, keep it side.
Method – How to Make Bhature
Step 1 – Take a large bowl, add maida, semolina (suji), curd, salt, baking soda and knead in soft dough. Add water if needed. Cover with wet muslin cloth and set aside for 4 to 5 hours.
Step 2 – Heat oil in a deep pan.
Step 3 – Divide the dough into equal parts and roll out into circles. Once oil get hot, deep fry them in hot oil until the bhature puff up and both sides are golden brown. Deep fry bhature one by one.
Step 4 – Take out on a paper so extra oil gets absorb.
Serving Chole Bhature
Step 1 – Take severing bowl and put chole in it and garnish it with julienne ginger and then take serving plate and put 2 bhature on plate.
Step 2 – Along with chole bhature serve sliced onion, green chutney, mango & green chilli pickle.
