Chicken Biryani Recipe: Some Details

Chicken Biryani Recipe: Ingredients

For Chicken Biryani:

  • Chicken – 1 kg
  • Onions – 4 medium size (sliced)
  • Red Chilli Powder – 1 tablespoon
  • Garam Masala – 2 teaspoon (prepared garam masala)
  • Green Chillies – 15 to 20
  • Garlic – 23 to 25 cloves
  • Ginger – 2 inch long
  • Curd – ½ cup
  • Cardamoms – 2
  • Black Cardamoms – 2
  • Salt – 1 tablespoon
  • Ghee – 15 to 20 tablespoon
  • Coriander leaves – few chopped
  • Water – 3 cup

For Garam Masala:

  • Mace (Javitri) – 2
  • Poppy Seeds (Khus-khus) – 1 teaspoon
  • Dry Red Chilli – 2
  • Bay leave – 1
  • Green Cardamoms – 2
  • Black Cardamoms – 2
  • Black pepper – 5 to 6
  • Cloves – 4
  • Cumin seeds – 2 teaspoon
  • Coriander seeds – 2 teaspoon
  • Cinnamon Stick – 1 inch long

For Cooking Rice:

  • Basmati Rice – 1/2 kg (Soaked for 1 hour)
  • Shahi Jeera – 2 teaspoon
  • Black pepper – 5 to 6
  • Star Anise (chakra Phool) – 1
  • Cinnamon Stick – 1 inch long
  • Bay leaves – 2
  • Clarified butter (ghee) – 9 to 11 tablespoon
  • Food colour (red & yellow) – pinch of both colours
  • Salt – 3 teaspoon
  • Water – 2 cup
  • Coriander & Mint Leaves – few leaves

For Onion Raita:

  • Yogurt – 1 cups
  • Onions – 1 medium size (finely chopped)
  • Green Chillies – 1 (finely chopped)
  • Chilli Powder – 1/2 teaspoon
  • Roasted Cumin Powder – 1 teaspoon
  • Mint Leaves – Few chopped leaves
  • Salt – 1 teaspoon or as per taste

For Garnishing:

  • Fried Onion – 2 tablespoon (optional)

Preparation for Chicken Biryani

To Make Garam Masala Powder:

Step 1 – Dry roast mace (javitri), poppy seeds (khus-khus), dry red chilli, bay leave, green cardamoms, black cardamoms, black pepper, cloves, jeera, coriander seeds and cinnamon stick.

Step 2 – Grind the all roasted spices and store in air tight container.

To Make Green Paste:

  • Take grinder jar, put green chilli, garlic and ginger and make smooth paste, keep aside.

Method – How to Make Chicken for Biryani

Step 1 – Take a pressure cooker, add ghee and when ghee heat up add cardamoms, black cardamoms and onion and saute it for 5 min or until it turn golden brown.

Step 2 – Now add chicken and salt and saute it for 15 min.

Step 3 – Add green chilli, garlic and ginger paste and saute for 15 min.

Step 4 – After 15 minutes, add curd, salt, garam masala , red chilli powder and stir for 10 min or until the ghee starts to separate and float on top at low flame.

Step 5 – After oil separated from it add water and close the cooker and cook for 4 to 5 whistles at medium flame.

Step 6 – Turn off the flame. Open cover once the pressure has reduced naturally and put some chopped coriander leaves and mix well and keep aside.

Method – How to Make Rice for Biryani

Step 1 – Take deep pan/pot, heat ghee in pan add shahi jeera, black pepper, star anise (chakra phool), cinnamon stick and bay leaves, saute for 2-3 min.

Step 2 – Add soaked rice and salt and saute for 5 min.

Step 3 – Add water and cover the pot and cook it for 20 min at medium flame. Make sure you don’t overcook the rice.

Step 4 – After rice cooked add food colour and cover it for 5 min.

Step 5 – Now mix the rice with a light hand and don’t break or mash the rice.

Step 6 – Rice for biryani is ready now.

Method – How to Dum the Biryani (Layering the Biryani)

Step 1 – Take a deep pot, grease some ghee at the bottom of the pot.

Step 2 – Now we layering the biryani; Put some prepare chicken first and spread evenly. Now add some cooked rice and spread evenly.

Step 3 – Now repeat the method and make 3 layers likewise.

Step 4 – After layering the biryani, cover it and seal with dough. Cook for 10-12 minutes on low heat.

Step 5 – After 15 min, add chopped coriander & mint leaves. Mix the biryani with a light hand.

Step 6 – Now garnishing the biryani with fried onion.

Method – How to Make Onion Raita

Step 1 – Take onions, chillies and salt in a bowl, mix well and keep aside.

Step 2 – Now whisk yogurt till smooth. Add onion mix in it and add chilli and cumin powder and mix well.

Step 3 – Onion raita is ready to serve.
