Aloo Tikki Recipe: Some Details

Aloo Tikki Recipe: Ingredients

For Aloo Tikki Stuffing:

  • Chana Dal – 100 gm
  • Amchur Powder / Dry Mango Powder – 1/2 teaspoon
  • Garam Masala Powder – 1/4 teaspoon
  • Ginger (chopped) – 1/2 teaspoon
  • Coriander (chopped) – 1/2 teaspoon
  • Red Chili Powder – ½ teaspoon
  • Oil – ½ teaspoon
  • Salt – 1/2 teaspoon or as per taste

For Tikki:

  • Potatoes – 500 gm
  • Green Chill  – 2 (finely chopped)
  • Corn Flour – 3 table Spoon
  • Salt – 1 teaspoon or as per taste
  • Oil – 5 or 6 table spoon (shallow fry)

For Chole:

  • Chickpeas – 1 cup
  • Onion – 1 medium sized (finely chopped)
  • Tomato Puree – 1 cup
  • Ginger & Garlic Paste – 1/2 teaspoon
  • Red Chili Powder – 1 teaspoon
  • Cumin Seeds – 1 teaspoon
  • Garam Masala – 1 teaspoon
  • Pomegranate (anardana) powder – 1 tablespoon
  • Salt – 1 teaspoon or as per taste

For Red Chutney:

  • Tamarind (imli) – 200 gm
  • Jaggery (gur) – 1 cup
  • Dates –  5 or 6 (soaked in water for 5 to 6 hour)
  • Black Salt – ¾  teaspoon
  • Red Chilli Powder – ½ teaspoon
  • Sonth (dry ginger powder)  – ½ teaspoons
  • Melon seeds (magaz) – 1 tablespoon
  • Salt – 1 teaspoon

For Green Chutney:

  • Green Coriander Leave – ½ Cup
  • Green Chili – 3
  • Mint Leave – 2 tablespoon
  • Cumin Powder – ½ teaspoon
  • Lime Juice – 1 tablespoon
  • Salt – 1 teaspoon or as per taste
  • Water – 3 tablespoon

For Serving & Garnishing:

  • Curd (Dahi) – 1 cup (packed) (optional)
  • Onion – 3 tablespoon
  • Green Coriander Leaves – 2 tablespoon
  • Fresh Pomegranate Seeds – 2 tablespoon
  • Cucumber – 8 slices (optional)
  • Tomato  – 8 slices (optional)

Method – How to Make Aloo Tikki Stuffing

Step 1 – Soak chana dal for about 3 hours, there after drain water and move dal into pressure cooker and add salt and 3/4 cup water and make it cook up to 3-4 whistles on a medium flame.

Step 2 – Open the pressure cooker and move dal in a bowl and let it cool down at room temperature.

Step 3 – Now heat oil into pan and add chopped ginger, chopped coriander, amchur powder, garam masala powder, red chili powder, salt and cook chana dal and mix & fry it for 5 mins.

Step 4 – Now move the stuffing in a plate and let it cool down.

Method – How to Make Aloo Tikki

Step 1 – Take Potatoes and peel them and pressure cook it up to 5-6 whistle on a medium flame.

Step 2 – Now take out potatoes and let it cool down.

Step 3 – Mash the boiled potatoes using potato masher or with free hands. Make sure there are no lumps.

Step 4 – Add corn flour to the mashed potatoes as well as salt as per taste.

Step 5 – Now mix it well till corn flour is evenly mixed.

Step 6 – Divide the potato mixture into 8 equal parts. Now take one portion and make round shape and flatten approx 1/2 inches thick. Now put 1 teaspoon stuffing in centre of aloo tikki. After filling the stuffing close the tikki. Similarly make all other.

Step 7 – Now heat oil in a pan, when the oil is heated up, turn the flames to medium and put 4 aloo tikki and shallow fry them until it turned golden brown from both the sides. Now remove the aloo tikki from pan and place them on the tissue paper to absorb extra oil.

Step 8 – Now aloo tikkies are ready.

Method – How to Make Chole

Step 1 – Take a pressure cooker and add 3 cup water, put inside soaked chickpeas and salt. Pressure cook it up to 8-11 whistle on a medium flame.

Step 2 – Take pan and heat the oil. Once oil gets heat up add cumin seeds. After it splutter add chopped onion. Saute it till onion turn golden brown now add ginger-garlic paste and saute it.

Step 3 – Now add spices like turmeric powder, red chilli powder, garam masala, anardana powder and coriander powder. Saute the masala for 2 mins and add tomato puree. Cook the masala on low flame for 5 min till oil start leaving on the edges.

Step 4 – Add boiled chickpeas into masala and add 1 cup of water and put cover on the pan and let it cook for 15 mins.

Step 5 – After 15 min chole will get thick consistency, now chole for aloo tikki is ready.

Method – How to Make Red Chutney

Step 1 – Soak tamarind in water for an hour. Remove thick pulp and strain the pulp and keep aside.

Step 2 – In a pan heat oil and add jeera. When it crackles, make the flames low and add red chilli powder, dry ginger powder and Asafoetida (hing).

Step 3 – Now add tamarind pulp, grated jaggery, salt and mix well and cook for 2-3 min.

Step 4 – Cover the pan and allow the mixture to be boiling on low flames for 10 to 15 min until it gets thick.

Step 5 – Let the chutney cool down at room temperature. The meethi chutney is ready now.

Method – How to Make Green Chutney

Step 1 – Wash the fresh coriander leaves and chop it.

Step 2 – Take grinder jar and put in it chopped coriander leave, green chilli, mint leave, cumin powder, lime juice, salt and water. Now grind it until it turns out smooth.

Step 3 – Now move the chutney into bowl and green chutney is ready to serve.

Aloo Tikki Serving & Garnishing (Optional)

Step 1 – Take 2 aloo tikki in one serving plate.

Step 2 – And put chole on top of tikki, now pour 3 teaspoons yogurt on top of it. Drizzle sweet chutney and green chutney. And then sprinkle raw onion, fresh pomegranate, 1 slice of cucumber and tomato on top of it.

Step 3 – Now aloo tikki is ready to serve.
